Pink Chocolate Rice Krispie Treats

Our friend's little girl, Donna, turned three-years-old yesterday. I wanted to bring something fun, for her birthday dinner. So I glanced through my kitchen cabinets and came up with these little cuties. They incorporate 3 things, that I know, little girls love: sprinkles, chocolate, and pink!

You'll notice the recipe doesn't follow the traditional one on the Rice Krispies box. I've learned from Ryan's mom that one should always add more marshmallows and more butter. It's a little indulgent, I know. But, unless you're planning on eating the entire batch, it's not going to make that much of a difference in calories. At least that's what I tell myself.

They're cute, they're gooey and they were a hit even with the adults (including those who claim to "not be a sweets person"). The white chocolate adds a nice touch and you can change the color depending on the occasion (for example: green for St. Patty's Day that's coming up).


Pink Chocolate Rice Krispie Treats

Ingredients
  • 6 Tbsp. butter
  • 16 oz. bag mini marshmallows
  • Dash of cinnamon
  • 7 cups Rice Krispies cereal
  • 1 1/2 cups white chocolate chips (or broken up chocolate bar)
  • Red Food Coloring
  • Sprinkles (optional)
Directions
In a large pot, melt butter over low heat. Once butter is melted, add marshmallows and a dash of cinnamon, if desired (I thought it would add a little extra something). Keep stirring until completely melted. Remove from heat.

Add cereal to the pot and stir. Lay out some parchment paper on a cookie sheet. Spray paper with cooking spray. Dump warm rice krispie mixture onto parchment paper. Spread out and flatten with a spatula. Add sprinkles on top, while still warm.

While the rice krispies are cooling, prepare a double boiler - balance a glass bowl over a pot of boiling water. Add white chocolate chips to glass bowl. Stir frequently, until completely melted. Add drops of red food coloring, until it reaches desired shade (I used about 7-8 drops).

Keep pink chocolate warm and melty in double boiler. Cut rice krispies into squares. Dip each square into chocolate, then place back on parchment paper. Chill rice krispies treats in fridge for at least 10 minutes.


When I first brought the treats in, Donna's eyes lit up. She was told of course, by mom and grandma, that she had to wait until after dinner to try them. Being the adorable, well-behaved, little gal that she is, she stood on the kitchen stool and stared at them...carefully rearranged them...poked at them, while everyone hustled around her to prepare dinner. 

Finally the time came and she was able to dive in...

  7. Couldn't you melt the chocolate and put it in the dish and then put the rice krispie mix on top or would that stick and not look as nice?

    1. That might work but you would would have to work fast, because the chocolate will begin to harden and cool quickly.
